Ingredients
For the Pasta
- 8 oz dry cavatappi pasta, by weight (use whatever pasta you like)
- 2 cups chicken bone broth
- Garlic powder, onion powder, and black pepper to taste
For the Chicken & Broccoli
- 3 cups chopped or shredded rotisserie chicken
- 2–3 cups frozen broccoli florets, or as desired
- 1–2 tablespoons butter
- ¼ cup chicken bone broth
- 1 tablespoon of my Emotional Support Spice Blend (see below!)
For the Creamy Boursin Alfredo Sauce
- 1½ cups cottage cheese
- 1 package (5.2 oz) Boursin Garlic & Fine Herbs cheese
- Up to ½ cup chicken bone broth, as needed for blending
- ¼–⅓ cup freshly grated Parmesan cheese
- 1–2 teaspoons lemon juice (or cooking wine)
- Freshly ground black pepper, to taste
- Additional Parmesan for serving
Instructions
Step 1: Start the Pasta
- On the Ninja MultiPot XL, select your cooking zone, then Pasta.
- Add 8 ounces of dry cavatappi pasta (measured by weight) to Zone 1.
- Pour in 2 cups of chicken bone broth and season lightly with garlic powder and black pepper.
- Close the lid and start cooking on the PASTA program.
- When the pasta finishes, the Ninja automatically switches to Keep Warm. Leave the pasta in the pot.
Step 2: Prepare the Creamy Boursin Alfredo
- While the pasta cooks, add the cottage cheese, Boursin, chicken broth, Parmesan, and a splash of lemon juice to a blender.
- Blend until completely smooth.
- Set aside until the pasta is finished.
Step 3: Combine the Pasta and Alfredo Sauce
- Pour the blended Alfredo sauce directly into the pasta zone.
- Stir gently until all the cavatappi is coated.
- Leave Zone 1 on Keep Warm while you finish the chicken and broccoli. Avoid boiling the sauce, since too much heat can make cottage cheese sauces grainy.
Step 4: Sauté the Chicken (Zone 2)
- Select Sear/Sauté for Zone 2 and set the temp to High.
- Add 1–2 tablespoons of butter and let it melt.
- Add 3 cups of chopped or shredded rotisserie chicken and sauté until heated through.
- Sprinkle a generous tablespoon of Emotional Support Spice Blend over the chicken and stir to distribute.
Step 5: Add the Broccoli
- Pour about ¼ cup chicken bone broth into Zone 2 with the seasoned chicken.
- Add the frozen broccoli florets and stir to combine.
- Close the lid briefly to let the broth create steam, then stir and keep cooking until the broccoli is tender-crisp, about 5 minutes or longer as needed. It should still have a little bite!
Shortcut: you can also steam the broccoli in the microwave and add it straight to the pasta.
Step 6: Bring Everything Together
- Transfer the seasoned chicken and broccoli into Zone 1 with the creamy Boursin cavatappi.
- Gently fold everything together until evenly coated in the Alfredo sauce.
- Taste before adding salt or extra pepper. The Boursin, Parmesan, rotisserie chicken, bouillon, and bone broth already bring plenty of saltiness.
- Finish with additional freshly grated Parmesan on top.
Serve warm and enjoy!
My Emotional Support Spice Blend
I keep a big batch of this seasoning mixture on hand because it makes seasoning dinner so much easier! Since it uses chicken bouillon, the salt comes from that, so there’s no need to add salt separately except to taste. I’ve affectionately dubbed my premade jar my Emotional Support Spice Blend!
One batch (feel free to multiply it!):
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried parsley
- 1 teaspoon black pepper
- 1 tablespoon chicken bouillon seasoning
Combine everything in a small container with a lid and shake until thoroughly mixed. For this pasta, use just 1 tablespoon of the blend and save the rest for future meals.

Recipe Notes
Why cottage cheese? Blending cottage cheese creates a rich, creamy sauce while adding protein. Combined with Boursin, it makes a flavorful alternative to a traditional heavy-cream Alfredo.
Why bone broth? Cooking the pasta in chicken bone broth adds flavor and a little extra protein.
Using a regular stovetop: Cook the 8 oz cavatappi with 2 cups chicken bone broth, stirring regularly. The broth cooks into the pasta, so there should be no need to drain. Stir in the cottage cheese Alfredo over low heat. Prepare and season the chicken in a skillet, steam the broccoli in a large skillet, then combine everything with the sauce over gentle heat.
Leftovers: The pasta keeps absorbing sauce as it sits. Add a splash of chicken bone broth or milk when reheating to bring back the creamy texture.
